If you would like to make mini cakes, there are cute mini cake pans, mini Bundt pans and other unusual shaped bakeware available. Mini cakes will take less baking time, so reduce the cooking time by one-half of the recommended recipe time and check for doneness every five minutes thereafter.

Add a tablespoon or two of meringue powder to your cake batter. This lightens the texture of your cake and it will rise a bit higher.

A teaspoon of lemon juice added before creaming the butter and sugar produces a lighter cake texture.
